Happy Monday! Today is the first day of my new series, Monday Meal Tip. Every Monday I’ll be sharing a food related tip to help you stick to eating healthy in a way that’s manageable and delicious. My tips will include everything from delicious quick meals to tips for chopping produce faster to food finds at the store that make cooking faster and that’s just the start.
Last week I discussed two simple tips for sticking with your resolution and mentioned that I actually set a resolution this year (most years I don’t). This series is part of that resolution. My resolution to improve my blog for you guys to provide valuable content more often and to finally look like a professional site. I know, I should’ve bought my domain long ago and upgraded the site like a big kid. Well now I’m finally doing it. Domain bought, up next is self hosting.
On the list of things to improve was updating my workout pins. You may have noticed, last week I started including a different pin than my usual. I played around with it a bit and I think I finally found a version I like. Let me know what you think! I love the feedback.
Ok so on with the meal tip for this week. Everyone loves meals that are simple to prepare, delicious, and healthy, right? One of my favorite meals that checks off all the boxes is healthy pizza. I love using half of a whole grain naan bread as the crust (love this brand, found at most grocery stores) and then topping it with whatever spread, meat, and veggies I’m in the mood for. Serve with a side salad and you have a quick, yummy meal. I’ve used cauliflower crusts before however I prefer naan bread since it’ll give you that doughy, pizza crust texture. And let’s the honest, for a lot of us, the dough is the best part. Amiright?
For a more basic pizza, spread some jarred tomato sauce (love this brand, the less ingredients the better, the less chemical ingredients the better) on the naan, cooked ground lean beef, shredded mozzarella, and Italian spices. Bake for about 7-8 minutes and you’re done.
Today I’m sharing a pizza recipe that Derek and I love, it’s one of our favorites. The ingredients are less traditional but I promise, it’s delicious. I hope you guys love it as much as we do!
1 yellow onion, diced
1lb lean ground turkey
1/2 whole wheat Naan
2 tbsp plain hummus
1 tbsp diced artichoke heart
2 grape tomatoes, diced
1 tbsp feta
1 tsp dill
Warm a large skillet over medium heat and coat with cooking spray. Add the diced onion, cook until translucent. Add the ground turkey and break up with a spoon. Cook until the turkey is no longer pink and remove from the heat.
Warm oven to 350 degrees. Cover a baking sheet with aluminum foil (no need to cover with cooking spray). Assemble pizza on the baking sheet: Spread naan with hummus then top with the desired amount of turkey and the rest of the ingredients. Bake for 7-8 minutes. The cheese will not be melted but that’s fine. Serve with a side salad.
The turkey mixture lasts Derek and I a few days including for his lunch.
