Let me start off by saying that these taste like a healthier version of the Girl Scout Do-si-do cookies, in my opinion. I didn’t intend for them to, they just turned out like that and they’re amazing. I decided to make these in honor of today being National Peanut Butter Day. Did you know that such a thing existed? I didn’t until I looked in my work issued calendar last week and there it was, surprising considering that I work for a company that has nothing to do with peanut butter. Super cool that they appreciate it though because peanut butter is life.
Being pregnant, I can never make it to lunch without a snack. Popping in two of these is perfect and holds me over. Also known as protein balls or protein bites, they’re portable, delicious, and super easy to make. I guarantee your kids will love them too.
Peanut Butter Energy Balls
- 1 Cup Peanut Butter
- 1/4 Cup Vanilla Protein Powder
- 1/4 Cup Pure Maple Syrup
- 1/2 tsp Vanilla Extract
- 1/2 tsp Ground Cinnamon
- 1 1/2 Cups Rolled or Steel Cut Oats
- Combine all ingredients in a large bowl.
- Using a tablespoon, scoop out mixture and roll into a 1 inch ball.
- Place energy balls on a plate or in a Tupperware container and refrigerate overnight to set.
I used Vega Protein and Greens Vanilla flavored protein powder. It’s great in baked goods, adding a hint of flavor without the chemical taste that most vanilla powder have. One caveat about it though, when used as a protein shake, it’s the worst thing you’ll ever taste so I don’t recommend using it like that.
